1. Like u remember from good old days..!!
Preparations: Take about 200 Grams of wheat flour, knead it with the help of water- if know to do so :) - if you don't, then put it in the food processor, and very slowly add water with intervals - the dough will be ready.
Now make small small balls of the dough. Roll one ball a time - no pun indented ;) - at a time into a round shape. you will need to dip this ball, and the rolled roti to be dipped into dry flour as u attempt to roll it bigger and slimmer. Once u are happy with the shape & size - place a tawa (flat pan) on the gas stove - turn the gas on, and place the roti on the tawa. Turn it once, and then move the tawa aside and place the roti directly on the stove, quickly turn a few times, and tadaa - roti is ready!!
Best served hot with Ghee on the roti - can be had with almost anything !!
I use to love having these hot roti's with just ghee & lil salt on it....!! :)
2. Poli - the kind of roti i learned to make while i was in Pune
All the above remains same till you place the roti on the tawa. After you turn it for the first time apply very lil oil on it - turn it and then apply lil - extremely lil oil to the other side too. let it cook on the tawa itself!!
after about 2 -3 turns its ready!!
3. Paratha's
Now lets start over from the point where u finished rolling the roti - now turn that round roti to make a semi circle & then turn that semi circle into half - to make a triangle. Now dip this shape again into the dry flour and start rolling along the edges - maintaining the shape of the triangle. once done to a decent size, place this on the tawa. now turn to another side, apply - ghee, oil, butter - anything as per your choice. about a teaspoon - should suffice on each side.
once cooked well from both sides - u can munch this with more options than the plain roti. This can be had with just about anything - kids can be given this with cheese spreads, or honey, or pickle or with mayo...!!
4. Stuffed Parathas:
Now this dish is absolutely at the mercy of your creativity.
wen you are done rolling the roti, on top of that u could keep a filling - pack that filling up with the sides of the roti - dip it again in the dry flour and roll it softly again into a round flat shape - don't apply too much pressure - the more softly rather swiftly u end up rolling this the better it would be. once done rolling place it carefully on the tawa... let it cook a lil bit from both side and then apply - ghee, oil or butter on both sides - liberally!
once cooked - its ready to be yummed with curd, pickle or chutney's - all all of it.
Now the fillings - there can be some hundred thousand variants :
A. Potato filling: Boil 4 medium sized potatoes as much as they can be mashed thoroughly. Add finely chopped onions (approx 1-2 onions) depending on your like for the onions. Actually u can choose to not add onions as well, then it will only be potato filling - but i kind of love it with the onion ensemble. Add 2 finely chopped green chillies to this mix, a lil bit of coriander - very finely chopped. Salt, pepper to taste, and a lil bit of lemon juice - squeeze of about half a lemon to this mix. Give a good mix to all ingredients and your potato - onion filling is ready for the paratha's.
B. Paneer - Cottage Cheese: Take about 100 grams of cottage cheese, grate it well, mix salt & pepper to taste and the filling is already - ready :)
C. Onion Filling: Take 2 finely chopped onions, add 2 chopped green chillies, and some coriander to this. Add salt pepper and lil dry mango powder - about half a teaspoon. mix this all well and yet another filling is ready.
D. Pees Paratha: Boil about a cup of pees, as much as u cud easily mash it into a paste. Season it with salt & pepper and its ready.
All the above can be mixed and matched in various combinations. Also note a few tips to get best results:

- Try and stay at the edge of the roti or paratha while rolling for best cooking
- Don't over indulge in applying ghee or oil on the paratha - moderation is the technique!
- The amount of filling u wish to take for each paratha - can be best around 2 teaspoon for a small size wheat dough ball.
- Tastes best when served hot
