keri pana

Since this blog has been started in summers, its only fair to include the one thing that use to become a must back home with the arrival of summers - and Mangoes!!!

Oh my my the yummylicious mangoes.. i bet the ad on one of the mango drinks - "aamsutra" - fully awesome!! and so is the feeling with a yummy slice of mango in your mouth... but with summers also comes the plethora of illnesses.. only and only due to the unbearable heat!

however, there are always seasonal remedies to seasonal issues - this heat will be taken care of by Keri pana - simply put as the broth of raw mango - absolutely delicious and very very useful to keep the heat off your body

Ingredients:

Raw mango - 4 - 5
Water
Salt / Black Pepper / Sugar / Cumin Seeds / Black (Rock) Salt

Method:

Boil the raw mangoes - ideally in a pressure cooker or you could microwave them on max for about 15 Min's.
In pressure cooker you'll need about 3- 4 whistle, the mangoes need to be squishable is how much u need to boil them
Once done allow it to cool and squish and make a puree of it. Add roughly 3 quarters to a litre of water to it. Now is the interesting part - just like a lemonade, you have options of making it purely sweet or purely salted or mix.

use your cooking wisdom to improvise - I'll share the process of making it sweet n sour

okay before you n i both forget pls remove the seeds of mangoes from the base that  u have prepared!!
There is no need to filter it - let the raw particles of mango be there (the pulpier it is, the healthier it will be)

Now in a dry pan roast about a tsp full of cumin seeds, grind them - preferably  with a hand grinder (like those of stones / wood etc) or if not possible then mixer grinder, add this to the juice, now add half tsp regular salt, half tsp rock salt, a quarter tsp black pepper, and 2 tbsp of Sugar.

mix this entire thing well and now its ready to relinquish

for only sweet add only sugar and nothing else, for salted add all the rest and no sugar as mentioned above

another variation to this drink and also incredibly soothing in the summers is adding mint

For Mint Flavour:

add a quarter tsp of lime juice to this juice in any of the above sweet sour combinations
take about 15 - 20 mint leaves and grind them well - really fine in a grinder, and add this paste to the ready juice.

best served chilled with some crushed ice and mint garnish.

Dum Aloo - the simplest kinds!

Now after my sweet has been taken care off, the first other normal recipe has to be something to do with potatoes, else  my dear husband will get mad at me.. coz as a standars conversation - whenever u ask - so what should i make for dinner (actually pretty much a standard questions & standard answer for anytime any meal of the day - his answer would be - anything with aaloo (potato)!!

well ideally with the hit ratio of the aloo paratha (an indian style of potato stuffed bread) being the sunday brunch menu - that should have been it - but i am so done with it i no longer consider it as a recipe tobe shared (i will eventually :) ) that now i feel i have to share a richer (although still potato based) recipe...

so here we are with dum aloo

Ingredients:

 Baby Potatoes - about 10 - 15
Oil
Cumin Seeds 1 Tbsp
Aofoetida (hing) - 1/2 tsp
onions - 2 large
Ginger garlic paste - 2 tsp
tomatoes - 3 large
red chili powder - 1/2 tsp
cumin powder - 1/2 - tsp
coriander powder - 1 tsp
turmeric powder - 1/2 tsp

Method:

Peel, wash and prick potatoes all over, like in tom & jerry - so if you where to pour water on the poatato, it would leak like a fountain...!!  Keep in salted water for 20 minutes. Heat oil in and deep-fry the potatoes on medium heat till golden brown. Heat oil in a pan, add cumin seeds and asafoetida (hing) and cook on medium heat till the cumin seeds change colour. Add onion and stir till the onion turns light golden. 3Add ginger-garlic paste and sauté for a minute. Add a little water and stir. Add tomatoes and sauté for a few minutes. Add a little water and cook till tomatoes turn pulpy. Add red chilli powder, cumin powder, coriander powder, turmeric powder and a little water and stir. Add fried potatoes and stir to mix well and cook for two minutes. Add a little water and salt. Mix well and simmer for five minutes or till the potatoes absorb the gravy. Add garam masala powder and stir. Remove from heat and serve hot garnished with coriander leaves.

Chocolate peanut butter cheesecake

Considering this is the first ever recipe, from me on this blog - me here refers to the person with the sweetest tooth possible ever.. like always say i could live on sweets!! It had to be a sweet sinful start - and what better than my own personal favorite - the cheesecake. well i am not even sorry! coz you wont be either once you have had this - just one tiny slice can do it all - then u would sinfully want to over indulge then its only u n u to be blamed.. coz i only wrote it here... u made it.. and u had it!
lets see what this sin is all about -

Ingredients:

  • 100 gms of any fibre rich biscuits of your choice
  • 50gms salted peanuts
  • 50gms dark chocolate chips
  • 50 gms unsalted butter
  • 300 gms cream cheese
  • 4 eggs
  • 150 gms caster sugar
  • 100 ml sour cream
  • 200 gm smooth peanut butter
  • 30gm soft brown sugar
  • Baking Dish
  • Butter paper

Method

Pre heat the oven on 180 degrees,
Then casually grind the biscuits, peanuts, dark choco chips, & butter for the base
Once its all mixed and crumpled, pour the mix in the base of the baking dish, ready with the butter paper - grease this with little melted butter in advance

refrigerate this while you do the rest of the preparations

Now whizz the cream cheese, sour cream, eggs, sugar & peanut butter gently to make a smooth  mixture. now gently pour this on top of our crumpled base sitting in the fridge - let this cook in the oven for an hour - we only want this dried up

Now in a small fry pan warm choco, brown sugar, and sour cream, on low heat till it simmers, once done - gently pour this on top of the almost done cake - and make a nice shiny topping

finally, set the cake in the oven for the final 10 minutes, once the cake is done, let it cool in the baking dish itself, then leave it in the fridge overnight or for at least 6- 8 hours.

and now stop counting on those calories.... enjoy it shamelessly!!
